¡MAKE THESE ENCHILADAS, AMIGOS!
After tonight's smashing success (another triumph in a 9 x 13) I was going to faithfully transcribe the recipe for chicken enchiladas with red chili sauce, however, I see Katie the Parsley Thief has already done it, and with lovely photos. I found it in The Best Cover and Bake Recipes. Her recipe omits this step, which adds some heat --> to the cilantro/cheese/cooled chicken mixture add a 4 ounce can of pickled jalapenos, drained and chopped.
